Onions
You may not like raw onions, but if you have not tried them grilled or roasted you are missing serious flavor. They are sweet and go with almost any entre, grilled or otherwise. They are especially good with kebabs. There are three basic cultivated types: Bermuda, Spanish, and Italian. Bermuda onions are large, flattened, and have a color ranging from white to yellow. They have a moderately strong flavor and are best cooked. Spanish onions are large, round, and range in color from yellow to almost red. They are also best cooked and are interchangeable with Bermuda onions. Italian onions are smaller and red in color. They have the mildest flavor of the three and are most commonly used raw. Sweet onions can be any of several varieties but by law must have a sugar content of at least 6 percent. They include specialty onions such as Vidalia and Walla Walla. Green onions, or scallions, are merely young plants of any variety.
