Grilled Pork Chops with Oriental-style Basing Sauce
Pork is the meat of China and also the Southern U.S. Note that it is pictured here with mashed sweet potatoes – East meets West. Pork goes well with most Oriental-style seasonings.
2 boneless pork chops (3/4 inch thick)
Canola oil for brushing
Salt and pepper to taste
Prepare the basting sauce (recipe follows). Prepare the grill for indirect cooking with a medium-hot fire. Trim the chops of peripheral fat, lightly brush them with oil, and season to taste with salt and pepper. Grill the chops directly over the fire for 3 minutes per side, lid closed. Move the chops to indirect and begin basting with the sauce. Continue cooking and basting with the lid closed for an additional 10 minutes or until done. Any remaining sauce can be applied after plating the chops.
Basting Sauce
1 tablespoon rice vinegar
1 tablespoon sugar
1 tablespoon soy sauce
1 green onion, white and greed finely chopped
1 teaspoon sesame oil
1/4 – 1/2 teaspoon Sriracha chile sauce
