Green Bean Salad

It is still Spring and as we progress through it I will be posting a few more Spring Specials that I love to eat with BBQ. I have only three raised beds. The lettuce is gone, the beans are in, and the tomatoes and cucumbers are on the way.

Green (Snap) beans, blanched

Red onion, sliced

Kalamata olives, seeded and halved

Feta cheese

Vinaigrette salad dressing

Prepare the vinaigrette (recipe follows) or a dressing of your choice. Bring a pot of salted water to a boil, add the beans, and boil for 5 minutes. Check the beans for doneness, tender but not limp. Shock the beans with cold water and thoroughly drain. Arrange the beans in salad bowls and add the onion, olives, and cheese to taste. Dress with the vinaigrette.

2/3 cup olive oil

1/3 cup red wine vinegar

1/2 teaspoon salt

1/2 teaspoon powdered mustard

1/4 teaspoon white pepper
