Cucumber Salad
This is the last of my Spring salads to accompany grilled entrees. Cucumbers are in and will remain for the rest of the summer. This is a tasty, non-fat, very low-calorie salad. It does not use salad dressing, not even a vinaigrette. It sounds too simple to be good. You don’t even have to peel the cucumbers if you do not mind the skin.
1 medium to large cucumber
1/4 large red onion
Rice vinegar to taste
Salt and pepper to taste
Sliced fresh chives or dried dill weed (optional)
Slice the cucumber and red onion, and divide them between two salad bowls and dress with salt, pepper, and rice wine vinegar. Adding fresh chives or dill weed is optional.
