Simple Grilled Zucchini
Back in October 2018 I posted Grilled Zucchini with Herbs. I still use that recipe, but this is a simplified version that I use when in a hurry. They cook in about the same time as a grilled chicken breast. I used dried dill weed in this one, but almost any dried herb can be used, such as thyme, oregano, or basil.
Olive oil for brushing
Salt and pepper, or Creole Seasoned Salt to taste
Dried herbs to taste
Remove the ends of the zucchini and split them lengthwise. Brush both sides with oil and season the cut side.
Prepare the grill for hot, direct cooking. Grill the zucchini, lid closed, cut side down for 4 minutes, turn and grill for an additional 4 minutes. If large zucchini are used they will take 1 to 2 minutes longer on the skin side.
