Pork Chops with Cranberry-wine Sauce
Most people associate cranberries with turkey and Thanksgiving. However, sweet sauces go very well with grilled pork and this cranberry sauce is a bit different. In fact, it also goes well on vanilla ice cream.
2 to 4 thick boneless pork chops, 1 to 1 1/2 inch thick
Olive oil for brushing
Creole Seasoned Salt or salt and fresh ground black pepper
Prepare the sauce (recipe follows). Trim the chops of visible fat. Prepare the grill for hot indirect cooking. Brush the chops with oil and season. Grill the chops for 4 minutes per side directly over the fire, then move them to indirect. Grill for an additional 15 to 20 minutes on indirect until done.
Cranberry-wine Sauce
1/2 cup dried cranberries
1 1/2 cups dry red wine
Zest of 1 orange
Juice of 1 orange
6 tablespoons sugar (not sugar substitute)
Combine the first 3 ingredients (cranberries through zest) and let stand at room temperature for 3 hours. Combine with the remaining ingredients and simmer over medium heat until reduced by 1/2. the sauce can be reduced a little further if desired. Hold warm until served.
