Avocadoes are usually associated with guacamole, but they are excellent grilled. The addition of guacamole ingredients finishes them off.
2 medium tomatoes, cored and chopped
1/4 red onion, chopped
2 tablespoons chopped cilantro
1 tablespoon fresh lime juice
Pinch of salt
Slice the avocados through the stem and all the way around the seed. Twist the two halves in opposite directions to separate them. Strike the seed with the knife and twist to remove it.
Combine the remaining ingredients in a bowl and stir to mix. Heat the grill for direct high heat
Grill the avocados directly over the fire, lid closed, cut side down for 4 minutes. Turn and grill skin side down for 4 minutes. Remove them to a serving platter and top with the vegetable mixture.
