Grilled Cauliflower



Cauliflower is an excellent, healthy (low carb) vegetable for grilling. It has a mild flavor and can withstand a wide variety of seasonings. Seasonings with a liquid base is recommended because they can penetrate down inside the stems and flowerets.


1 small head of cauliflower

Salt and black pepper to taste.


Prepare the Basting Sauce (recipe follows). Remove the outer leaves from the cauliflower and cut into quarters through the stem.




Baste all sides of the cauliflower with the baste. Prepare the grill for medium-hot indirect cooking. While the grill heats pick up any baste that has run off and reapply it to the cauliflower. Season with salt and pepper.




Grill the cauliflower directly over the heat for 4 minutes, lid closed, on each of the three cut sides and top. Move the cauliflower to indirect and continue cooking for an additional 8 to 12 minutes (lid closed) until tender.




Basting Sauce

1/3 cup olive oil

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1/2 teaspoon ground turmeric


Combine all.
