Grilled Peach Foster




eaches have far more flavor than bananas and grilling them releases juice making them even more flavorful. For years I made Apples Foster for my young sons, they preferred the apple’s crunch to the mushy bananas.

2 ripe but firm peaches

Vanilla ice cream (optional)

Prepare the sauce (recipe follows). Cut the peaches in half through the stem and remove the stone. Prepare the grill for direct hot heat. Grill the peaches (lid closed) directly over the fire, cut side down for 4 minutes. Turn the peaches cut side up, baste with sauce, and grill for 4 additional minutes.





Remove the peaches to serving plates. You now have a choice, either spoon the remaining sauce over the peaches and serve or top them with a scoop of ice cream and then spoon the sauce over them.




Sauce

1 tablespoon butter

2 tablespoons brown sugar

2 tablespoons rum

1/4 teaspoon powdered cinnamon

Place the butter in a small sauce pan over low heat until melted. Remove from the heat, add the remaining ingredients, and stir to blend.
