Grilled Pork Chops with Raspberry Sauce




I have stated numerous times that pork goes well with sweet or fruit, and the meat is always sweeter next to the bone. This recipe is for bone-on pork chops with a sweet, yet slightly tart sauce. It is also for thick chops to satisfy the meat lovers.


2 to 4 thick (about 1 inch), bone-on pork chops

Olive oil for brushing

Salt or Creole Seasoned Salt

Fresh ground black pepper




Prepare the Raspberry Sauce (recipe follows). Trim the chops of peripheral fat, it adds nothing to the flavor and would probably be trimmed off at the table anyway. Lightly brush them with oil and season to taste with salt and pepper.




Prepare the grill for direct cooking over a medium fire. Grill the chops, lid closed, turning every 4 minutes until done (approximately 16 minutes). Just before removing the chops, brush both sides with sauce and return to the fire for 30 seconds. top with additional sauce after plating.




Raspberry Sauce

1/3 cup raspberry jam

3 tablespoons balsamic vinegar

1/4 teaspoon orange zest


Combine all ingredients and stir until the jam is fully dissolved. This sauce recipe is for enough for 4 chops.
