Grilled Pork Sirloins




Thin cut pork sirloin chops are tasty, relatively low in fat, easy to prepare, and cook quickly. The pork is pictured here with cipollini onions sautéed in butter and a splash of chicken stock.

1/2 teaspoon paprika

1/2 teaspoon chili powder

1/4 teaspoon brown sugar

1 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon ground cumin

1/8 to 1/4 teaspoon cayenne

Olive oil for brushing

1 pound thin sliced pork sirloin


Combine the first 7 ingredients (paprika through cayenne) in a small bowl and stir to thoroughly mix.





Prepare the grill for direct high heat. Lightly brush the meat with oil and season with the spice mix. Grill the meat directly over the fire for 2 1/2 to 3 minutes per side, depending on how thinly it is sliced.
