Grilled Pork Tenderloin with Honey-mustard Baste




The pork tenderloin is a moist, tasty, and very tender cut of meat that provides a hearty meal for two. These tenderloins are often sold in a sealed package containing two of them that will easily serve four people.


1 pork tenderloin

Olive oil for brushing

Salt and pepper to taste


Prepare the Honey-mustard sauce (recipe follows). Trim any excess fat from the meat. Prepare the grill for hot indirect cooking. Lightly brush the meat with oil and season with salt and pepper to taste (I used my Creole Seasoned Salt). Note in the picture the meat is on a sheet of waxed paper that will save a trip to the kitchen for a clean plate for the cooked meat.




Place the meat directly over the fire (lid closed) and cook for 4 minutes on each of its 4 sides (16 minutes total).




Move the meat to indirect with the large end of the tenderloin closest to the fire and begin turning and basting every 4 minutes. Cook for an additional 8 to 12 minutes until done.




Honey-mustard Basting Sauce


1/2 cup honey

1/4 cup coarse ground mustard

1/4 cup honey


Blend thoroughly.
