Grilled Shrimp Canapé
A canapé is a type of small hors d’oeuvre consisting of a piece of bread, cracker, or puff pastry topped with some savory food. Small shrimp will be more elegant for this recipe, but larger shrimp are more common and easier to grill and can be cut in half. The recipe is for only 12 canapés but can easily be multiplied for several dozen.
1/4 cup mayonnaise
1/2 cup yogurt
2 tablespoons fresh tarragon
1 teaspoon fresh lemon juice
12 small crackers
12 small or 6 large shrimp
Olive oil for brushing
Salt and pepper to taste*
*NOTE: I used both Creole Seasoned Salt and Creole Seasoning instead of just salt and pepper to spice up the recipe. I also used Original Triskets instead of crackers.
Combine the first 4 ingredients, blend thoroughly, and refrigerate for at least 1 hour for the flavors to blend.
Prepare the grill for hot direct cooking and skewer the shrimp. Brush with oil and season the shrimp with salt and pepper. Grill for 3 minutes per side for large shrimp and approximately 2 minutes per side for small.
