Ice Cream with Cranberry-winne Sauce



In July 2020 I posted a recipe for Pork Cops with Cranberry-wine Sauce and suggested that left over sauce may be good as a topping for vanilla ice cream. I never actually tested that theory until recently. It is good. If you want a special desert for company try it. I have reproduced the recipe below.


Cranberry-wine Sauce

1/2 cup dried cranberries

1 1/2 cups dry red wine

Zest of one orange

Juice of 1 orange

6 tablespoons sugar (not sugar substitute)


Combine the first three ingredients (cranberries through zest) in a small sauce pan and let them sit at room temperature for 3 hours. Add the remaining two ingredients, bring the mixture to a low boil and continue cooking until the sauce is reduced by 3/4, stirring as required to prevent burning. Chilling the sauce will thicken it further.
