Soy Glazed chicken Kabobs
This is a simple, quick, yet tasty recipe for a work week dinner. It is accompanied by grilled mushrooms and onions. All it needs is a boiled starch such as rice or quinoa to complete a meal.
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
3/4 teaspoon sesame oil
1 yellow onion
1 to 1 1/2 dozen fresh mushrooms
2 boneless skinless half chicken breasts
Canola oil for brushing
Salt and pepper to taste
Combine the first 4 ingredients (soy through sesame oil) in a small bowl or cup and stir until the honey is dissolved.
Cut the onion in half and the halves into 4 to 6 pieces. Skewer the onion and mushrooms. Cut the chicken into bite-sized pieces and skewer them. Brush the chicken and vegetables with oil and season with salt and pepper.
Prepare the grill for direct hot cooking. Place the chicken and vegetable skewers directly over the fire. Cook for 3 minutes on each of the four sides of all skewers, basting only the chicken with the soy mixture after each turning.
