BBQ Glazed Salmon




Salmon fillets are an excellent grill subject. I much prefer the fillets to salmon steaks, but that is a matter of personal preference. I also prefer skinless fillets although many recipes call for skin-on. This recipe is based upon a glazed salmon that my wife ordered recently in a restaurant. The glaze is my approximation, is simple, and goes equally with grilled or roasted pork.


1 skinless salmon fillet

1/2 cup thick, dark BBQ sauce

1/3 cup honey

2 teaspoons Sriracha

1/4 cup thinly sliced green onions

1 teaspoon sesame seeds

Olive oil for brushing

Salt and pepper to taste


Prepare the glaze by combining the BBQ sauce, honey, and Sriracha. Stir until thoroughly mixed. Place the sesame seeds in a dry skillet over medium high heat and lightly toast, shaking often to not burn. Prepare the grill for hot direct cooking. Lightly brush the fish with oil and season with salt and pepper. Grill the fish for 4 minutes directly over the fire, turn, and brush the top with glaze.





Cook for an additional 4 minutes and remove the fish. Bush the just cooked side with glaze.





Plate, brush with additional glaze if desired, and top with onions and sesame seeds
