Stir-grilled Summer Squash Medley

Summer is the time for grilling and not just burgers and steaks. With the availability of fresh vegetables be sure to add some to your diet. Squashes are ideal subjects and a grill-wok is an excellent way to cook them. There is no special formula for the vegetables to include or their relative quantity. This combination is simply what I had on hand.

2 small yellow squash

1 medium zucchini

1 large patty pan squash

1/2 to 3/4 yellow onion

3 tablespoons olive oil

Creole Seasoned Salt to taste

Prepare the grill for hot direct cooking. Cut the squash into equal sized pieces (1 to 1 1/2 inch). Place them in a grill-wok, place the wok on a tray (the tray is to catch oil and seasoning that falls through the wok). Drizzle with the oil, and season. Mix the vegetables with a spatula. Place the wok directly over the fire and cook for 15 minutes or until done, lid closed. Stir the vegetables with a spatula every 5 minutes.
