Grilled Zucchini with Herbs


Some fresh herbs have a strong enough flavor to withstand the high heat of grilling. Rosemary and oregano are two of them. In this recipe the herbs are simmered in olive oil which picks up their flavor.

2 medium size zucchinis

Olive oil for brushing

Salt and pepper

Prepare the basting sauce (recipe follows). Remove both ends of the zucchini and slice them in half lengthwise. Brush both sides of the zucchini with oil and season the flesh side with salt and pepper. Grill the zucchini cut side down for 4 minutes over a hot fire and turn them over. Brush the cut side with the basting sauce and cook for an additional 4 to 6 minutes, until they reach the desired doneness.

Basting Sauce

3 tablespoons extra virgin olive oil

1 tablespoon fresh rosemary, chopped

1 teaspoon fresh oregano, chopped (1/4 teaspoon dried can be substituted)

1 small clove garlic, pressed or minced

Place all ingredients in a small sauce pan and simmer for 5 minutes.
