Herbed and Grilled Zucchini
Split, seasoned, and grilled zucchini make an excellent, and quickly prepared vegetable, especially when the entré is also to be grilled.
2 medium zucchinis
Olive oil for brushing
Salt to taste*
Coarse ground black pepper to taste
Dried oregano to taste
Dries basil to taste
*Note: I normally use Creole Seasoned Salt instead of plain salt.
Remove both ends of the zucchini and split lengthwise. Brush both sides with oil and season the cut side.
Prepare the grill for hot direct cooking. Grill the zucchini cut side down for 4 minutes, lid closed, then turn and grill for an additional 4 minutes cut side up.
